 Peanapple Sandwiches with Granola – Great Snacks for Kids and Adults

It is September 11 and I can't let this day pass without talking about the hole in our hearts for the families of 9-11. It is a sad day but out of that tragedy emerged stories of bravery and heroism by ordinary people just like you and me, teaching us all a profound lesson in courage. As a way to honor all of those affected by 9-11, I am going to practice random acts of kindness all day. Even if it is just a friendly hello to a stranger or picking up the phone and supporting a loved one.  Maybe I'll even allow cars to cut in front of me all day!  Anything goes. Actually, I am going to commit to doing this every day this week, and see where it leads. Who knows? Maybe it will become a hard habit to break. I hope so because one thoughtful gesture can make somebody's day and what is better than that?

On to food. It's apple season again!  Organic apples are one of the world's healthiest foods because they are full of anti-oxidants. Apples are also high in fibre and foods high in fibre will fill you up.  I made these peanapple sandwiches for my Godson a few weeks ago, and he wolfed them down. But don't get me wrong, these are not just for kids. Peanapple sandwiches are also one of my favorite snacks. Make extras, and put them in the fridge. The lemon juice really preserves the apples without ruining the taste. This is one of those recipes where you say “how can something so simple taste so good?” Hope you enjoy these peanapple sandwiches as much as we did. Peanapple Sandwiches with Granola

Ingredients
  • 2 large apples
  • 1 lemon
  • 4 tablespoons peanut, almond nut or seed butter
  • 4 tablespoons granola
Instructions
  1. Use an apple corer or knife to remove the apple cores.
  2. Cut ½ inch off of the top and bottom of the apples.
  3. Cut the apples crosswise into ½-inch-thick-sllices
  4. Rub the cut sides of the lemon over both sides of the apples to prevent browning.
  5. Spread peanut butter on 4 apple slices
  6. Sprinkle the granola on top.
  7. Cover with the remaining apple slices
