Easy Sugar Glazed Tofu with Kale & Yams

Ingredients
Tofu
  • 1 14-ounce package extra-firm tofu
  • 3 tablespoons Zulka pure cane vegan sugar
  • 1 teaspoon dry mustard
  • 1 tablespoon paprika
  • 1 teaspoon cocoa
  • ¼ cup chili powder
  • 1 teaspoon ground cumin
  • 2 teaspoons ground black pepper
  • 1 tablespoon coarse salt
  • Dash cinnamon
  • 2 teaspoons of oil
kale & sweet potato sauté
  • ⅓ cup vegetable broth (plus more if needed)
  • 1 tablespoon fresh peeled ginger, minced
  • 1 small yam, peeled, cut into thin wedges
  • 1 bunch kale, veins removed, leaves sliced
  • ½ medium onion, sliced
  • 2 tablespoons of fresh lemon or lime juice
Instructions
Tofu
  1. Combine all the spices and mix well.
  2. Cut tofu into eight slices. Dry with paper towels.
  3. Dredge the tofu liberally with the spice mixture, coating all sides.
  4. Heat oil in a non-stick pan.
  5. When hot, add the tofu slices and brown on all sides. This only takes a few minutes on each side.
Kale & Yam Saute
  1. Meanwhile, heat the vegetable broth in a large nonstick skillet over medium-high heat. Add the ginger and onion and saute for a couple of minutes. Add the kale, sweet potato, and lime juice. Cover and reduce heat to low, and cook until potato is tender and the kale is wilted. Approximately 7-10 minutes.
  2. Arrange the kale and sweet potato mixture on a plate. Overlap tofu slices on top and serve.
