Slow-roasting the tomatoes brings out

Serves: 4 cups
Ingredients
  • 1 tablespoon extra-virgin olive oil
  • 1 onion, chopped
  • 4 garlic cloves, chopped
  • 3 tablespoons fresh thyme (or 1 tablespoon dried)
  • 2 tablespoons fresh basil (1/2 tablespoon dried)
  • 2 28-ounce cans kitchen ready crushed tomatoes
  • 1 teaspoon of salt (or more to taste)
  • ½ teaspoon of ground black pepper (or more to taste)
Instructions
  1. In a large saucepan, heat the olive oil over medium heat. Add the onion and cook until soft and translucent approximately 4-5 minutes. Add the garlic, thyme and basil and cook for another minute or two making sure you don't brown the garlic.
  2. Add the tomatoes and bring to a boil, stirring often.
  3. Lower the heat and simmer for 30 minutes.
  4. Season with salt and pepper.
