Cauliflower Hummus

Serves: 2-3 cups
Ingredients
  • 1 head cauliflower, timed and cut into florets
  • 3 garlic cloves, chopped
  • 5 tablespoons of tahini
  • Juice of two lemons
  • 1½ teaspoons paprika
  • ¼ - ½ cup vegetable broth
  • 1 teaspoon salt
  • fresh ground black pepper
Instructions
  1. Preheat oven to 450 degrees F. Lay the florets on a baking sheet lined in parchment paper.
  2. Place in oven for 20-30 minutes or until soft and a little golden brown. Let cool.
  3. Place the cauliflower in a food processor with the garlic, tahini, lemon juice, paprika, salt and pepper. Process. Add ¼ cup vegetable broth and process until smooth. Add more vegetable broth if it is too thick.
