HIGH PROTEIN LIGHT AND EASY QUINOA AND CHICKPEA SALAD

Ingredients
Quinoa
  • 1½ cups quinoa, rinsed
  • 2¼ cups water
  • 1 clove garlic
Veggies
  • 1 large cucumber, peeled, seeded and diced
  • 2 medium-large tomatoes, finely chopped
  • Corn - 2 ears cooked - sliced off - (approx 1 cup kernels )
  • 1 jalapeno pepper, seeded and diced
  • 1½ cups cooked chickpeas
  • ½ cup scallions, thinly sliced (or you can use half a red onion chopped)
  • ⅔ cup parsley - minced
  • ⅓ cup mint - minced
  • 1 ripe avocado, peeled, pitted and diced (keep a few slices for garnish)
DRESSING
  • ¼ cup fresh squeezed lime juice
  • 3 tbsp vegetable broth
  • ½ tsp salt
  • ⅛ tsp ground pepper
  • 1 clove garlic, minced
  • ¼-1/3 chipotle chili pepper
Instructions
Cook the quinoa
  1. Rinse the quinoa under a cold tap in strainer.
  2. Add the quinoa to saucepan with garlic - add the water - Bring water to boil -- Simmer for approx 20 minutes cook until the quinoa absorbs all the water - turn off heat - leave on stove for about 5 minutes - fluff and allow to cool
Veggies
  1. Combine all of the veggie in a large bowl.
  2. Add the quinoa and mix well.
Dressing
  1. Whisk the dressing ingredients together and pour over salad.
  2. Mix well and refrigerate until chilled.
  3. Taste before serving and add more lime juice as necessary for a tangy taste. Garnish with avocado slices and serve
