BASMATI RICE

  • ¾ cup uncooked brown basmati rice
  • ½ tsp fennel seeds
  • 2 cups vegetable broth or water
  • 1 cup corn kernels (from 1 ear)
  • ½ red bell pepper, diced
  • ⅓ cup thinly sliced scallions (1½ ounces)
Instructions
  1. In a saucepan, combine the rice, fennel seed and 1¾ cups of the broth and bring to boil over medium high heat. Reduce the heat and simmer, covered, for about 30 minutes until the liquid evaporates. Remove from the heat and let stand for 5 minutes. Fluff with a fork, cover to keep warm.
  2. In a small saute pan, combine the corn, red bell pepper and the remaining ¼ cup broth and simmer for 2 to 3 minutes. Mix into the rice with scallions.
