Buttermilk Pancakes

Ingredients
  • 3 cups soy or almond milk
  • 2 Tbsp freshly squeezed lemon juice
  • 2 tsp pure vanilla extract
  • 2 Tbsp organic maple syrup, plus more for serving
  • 2 cups of flour (combine gluten-free and brown rice flour for gluten-free)
  • 1½ tsp baking powder
  • 1 pinch of sea salt
Instructions
  1. Mix the non-dairy milk and lemon juice in a bowl and let them sit for 10 minutes. This will help thicken and curdle the milk.
  2. Whisk in the vanilla and maple syrup.
  3. In another mixing bowl, whisk together the flour, baking powder and salt.
  4. Combine the wet and dry ingredients being careful not to over mix.
  5. Heat your nonstick pan. Grease with a little oil and cook your pancakes until they are nicely browned on both sides, and cooked inside.
  6. Top with your favorite fruit, powdered sugar and maple syrup.
