Vegan Energy Bars with Oats, Apple & Ground Flaxseed

Ingredients
Wet Ingredients
  • 2 ground flax eggs*
  • 2-3 tablespoons of maple syrup
  • 2 teaspoons vanilla extract
  • 1 cup of non-dairy unsweetened milk
  • 1 large apple, peeled, seeded and coarsely grated
Dry
  • 2 cups of oats
  • ½ teaspoon salt
  • 1 teaspoon baking powder
  • 2 teaspoons ground cinnamon
  • 3 tablespoons ground flaxseed
Topping (optional)
  • 9 whole walnuts
Instructions
  1. Heat the oven to 350 degrees F
  2. Grease an 8 inch square baking pan. Line the bottom with parchment paper.
  3. Make the flax eggs by whisking together 2 tablespoons of ground flax with 5½ tablespoons water. Place in refrigerator for 10 minutes to thicken.
  4. Meanwhile in a large bowl, combine all the dry ingredients.
  5. In another bowl whisk together all the wet ingredients including the flax eggs.
  6. Add the wet ingredients to the dry ingredients and stir well to combine.
  7. Transfer the mixture to the prepared pan, spreading it out with a rubber spatula in an even layer.
  8. Bake for 30-35 minutes or until the oatmeal is firm to the touch and lightly colored on top.
  9. Cut into 9 squares and serve warm or room temperature. Top each with a walnut.
  10. Leftovers can be refrigerated up to 3 days in an airtight container, or wrapped well and frozen up to 3 months.
