Crunchy Roasted Chickpeas

  • 1 15-ounce can of cooked chickpeas, rinsed
  • 1-2 teaspoons olive oil
  • ¼ teaspoon cumin
  • ½ teaspoon chili powder
  • ⅛ teaspoon cayenne pepper
  • ⅛ teaspoon salt
  • Fresh ground black pepper
  1. Heat the oven to 400 degrees F.
  2. Place the rinsed chickpeas in a bowl. Toss with the olive oil.
  3. In a small bowl combine the cumin, chili powder, cayenne, salt, and pepper. Sprinkle on the chickpeas.
  4. Place the chickpeas on a baking sheet lined in parchment paper.
  5. Place in the oven and roast for 20 minutes stirring once.
  6. Sprinkle the seasoning evenly on top of the chickpeas and roast for another 10-15 minutes or until the chickpeas are crispy. You can also season them after roasting.
