Longevity Three Bean Soup

Ingredients
  • 1 onion, chopped
  • 1 red pepper, chopped
  • 4 garlic cloves, minced
  • 1 15½ ounce can of cooked kidney beans, rinsed and drained
  • 1 15½ ounce can of cooked black beans, rinsed and drained
  • 1 15½ ounce can of vegan refried beans (or pinto beans rinsed and drained)
  • 1 15½ ounce can of stewed or chopped tomatoes
  • 2 cups of vegetable broth (or more if needed) plus ⅓ cup for sautéing
  • 2 teaspoons of chili powder
  • ¼ teaspoon of ground cumin
  • salt & ground black pepper to taste
Instructions
  1. In a large sauce pan, sauté the onion and red pepper in ⅓ cup of vegetable broth until soft. Add the garlic and sauté for another minute. Add the remaining ingredients. Bring to a boil. Reduce heat and simmer for 10 to 15 minutes.
