Ingredients
  • 1 pound broccoli, separated into florets
  • ½ cup onions, chopped
  • 3 garlic cloves, chopped
  • ⅓ cup vegetable broth for sautéing & 4 cups for soup
  • 1 tablespoon dried basil
Instructions
  1. Coarsely chop the broccoli
  2. In a large soup pot, heat the ⅓ cup of vegetable broth.
  3. Add the onion and dried basil and cook until soft and translucent. About five minutes.
  4. Add the chopped garlic and cook for another minute.
  5. Add the broccoli and vegetable broth and bring to a boil.
  6. Reduce the heat to low and simmer, uncovered for about 10 minutes, or until the broccoli is fork-tender. Remove from heat and let cool.
  7. Add the broccoli mixture to a blender or food processor and process until the soup is smooth. Taste and add salt and fresh ground black pepper to taste.
