Tofu Mayonnaise from The Easy Five Ingredient Vegan Cookbook
- 1 cup silken tofu
- 1 tablespoon minced shallots
- 1 tablespoon Dijon mustard
- 2 tablespoons apple cider vinegar
- ⅛ cup water
- Salt and ground black peppers to taste.
- In a blender or food processor, combine all the ingredients. Process until smooth and creamy.
- Keep this in a covered jar in the refrigerator for 3 to 4 days.
