Easy Vegan Black Bean Burger with Avocado

Serves: 3
  • 1 15-ounce can cooked black beans, rinsed and lightly dried
  • 6 tablespoons rolled oats
  • 1 chipotle in adobo sauce, chopped (add a little sauce if you want it spicier but a little goes a long way)
  • ¼ cup mashed ripe avocado
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • ¼ teaspoon cumin
  • 2 tablespoons chopped fresh cilantro (optional)
  1. Put all the ingredients in a food processor and process until the mixture comes together.
  2. Shape into 3 patties. Fry them in a skillet for 3-4 minutes on each side until browned.
  3. Garnish with left over avocado, lettuce, and red onion for crunch.
