Peanut Dipping Sauce

Serves: ½ cup
- 1 tablespoon of minced fresh ginger
- 1 teaspoon minced garlic
- 1 tablespoon Mirin (sweet rice wine)
- 1½ tablespoons of low-sodium Tamari or soy sauce
- 1 tablespoon rice vinegar
- 1½ teaspoons red wine vinegar
- 1 tablespoon maple syrup
- ¼ teaspoon of dried basil
- 1 tablespoon of peanut butter (chunky works best but smooth is fine)
- Fresh ground black pepper
- (Optional - extra tablespoon of water to thin it)
- In a blender or food processor, combine all the ingredients and blend until smooth. Add a little water if you want it a thinner consistency.
- Cover and refrigerate until ready to use. Lasts up to one week refrigerated.
