ORDINARY VEGAN SWEET POTATO WITH BRUSSELS SPROUTS AND SUN-DRIED TOMATOES

Ingredients
  • 1 large sweet potato (depending on size - cook 450 degrees - 45 minutes or until
  • 6-8 brussels sprouts halved, stems and any discolored leaves removed - wash well or soak in a bowl of water
  • 2 cloves garlic, chopped
  • 1 tsp fresh lemon juice
  • ½ tsp lemon peel
  • 4 sun-dried tomatoes in oil, chopped
  • 1 tbsp olive oil
  • salt & pepper to taste
Instructions
  1. Scrub the skin of the sweet potato and poke a steam hole with a fork. Depending on size, bake in a 400 F oven for approximately 40 minutes or until soft.
  2. Meanwhile, boil some water in a saucepan.
  3. Add halved sprouts and boil for 3-4 minutes. Keep piercing with fork for doneness - you don't want to overcook them.
  4. Remove from water.
  5. Add olive oil to saute pan.
  6. Add garlic saute 30 seconds and then add all remaining ingredients and toss and saute for 5 minutes.
  7. Cut cooked sweet potato and pile on the brussels sprouts
