Vegan Chocolate Chip Cocoa Banana Bread
- ¾ Cup sugar
- ½ Cup Earth Balance vegan butter (I prefer Earth Balance)
- 3 ripe bananas, mashed (about 1 cups worth)
- 1 TBSP vanilla extract
- 1 Cup all-purpose flour
- ¾ Cup whole wheat flour
- ¼ Cup cocoa (unsweetened)
- ½ TSP salt
- ½ TSP baking soda
- ⅓ Cup coconut-flavored vegan yogurt or ⅓ cup soy or almond milk with 1 tsp vinegar
- ½ Cup vegan chocolate chips
- ¼ Cup chopped walnuts
- Preheat oven to 350F. Grease loaf pan with vegan butter and a dust of flour or canola spray. Set aside
- Cream together the sugar and margarine until fluffy. Add in mashed bananas and and vanilla extract and blend well.
- Whisk together flour, cocoa, baking soda and salt.
- Pour half of the flour mixture into the wet mixture and stir until combines.
- Add in the milk or yogurt mixture and combined. Add the remaining dry ingrediets and mix.
- Fold in the chocolate chips and walnuts. Add more milk if necessary but remember the batter should be thick.
- Spoon batter into the prepared loaf pan and bake for about one hour and 10 minutes.
- Top with Purely Decadent Dairy Free Ice Cream.
