Roasted Green Beans with Sage

  • 2 - 2½ lbs of green beans, trimmed (or 10 cups of your favorite vegetable)
  • 3 garlic cloves, chopped
  • 6 scallions, chopped
  • 3 tablespoons fresh, chopped sage leaves
  • 1 teaspoon salt (or more to taste)
  • 1 teaspoon ground black pepper (or more to taste)
  • 1 tablespoon fresh, chopped rosemary leaves
  • 1 tablespoon fresh, chopped thyme leaves
  1. Preheat oven to 375 degrees F. Place the beans on a large rimmed baking sheet. Sprinkle with salt and pepper.
  2. Roast beans, stirring occasionally for 10 minutes. Add scallions, garlic and herbs and cook for another 10 minutes or until beans are cooked.
