Sweet & Sour Red Cabbage with Tart Apples

I love adding a red vegetable when I am cooking a holiday meal. Beets are also a nice choice.

Ingredients
  • 1½ pounds red cabbage, cored and sliced into ¼-inch slices
  • 2 green apples, peeled, cored and cut into ¼-inch slices
  • ½ cup chopped onions
  • ⅔ cup apple cider vinegar
  • ½ cup apple juice
  • ½ cup red wine (optional - you can use water but the wine adds a nice richness)
  • ½ cup light brown sugar
  • 1 bay leaf
  • 2 whole cloves
  • ½ teaspoon salt (or more or less to taste)
  • ½ teaspoon ground black pepper (or more or less to taste)
Instructions
  1. In a large saucepan, combine the all the ingredients except the cabbage and apples. Bring to a boil, add the cabbage, reduce the heat and simmer partially covered for 30 minutes.
  2. Add the apples and simmer, uncovered for another 20 minutes. Remove from heat and let stand for 20 minutes. Discard the bay leaf and the cloves. Taste and season with more salt and pepper if needed. Serve.
