Ingredients
  • 2 cups of vegetable broth or water
  • 1 bay leaf
  • 1 tsp kosher salt (optional)
  • 1 cup quinoa, rinsed in a fine-mesh strainer and drained
Instructions
  1. Pour the broth into a medium size pot, add the bay leaf and salt. Set over medium heat, bring to a boil, add the quinoa and reduce the heat. Cover and simmer for 20 minutes. Remove from the heat and let stand for 10 minutes. Remove the bay left. Fluff with a fork and serve.
