Combine any of your favorite salad greens and top with a bounty of fruits and vegetables. This lovely, light citrus vinaigrette can enhance any salad combination.

Ingredients
Salad
  • 1 head of Romaine lettuce, chopped (or kale, spinach or a combination of all)
  • 15-20 cherry tomatoes, cut in half
  • 2 cups of chopped fruit (in season)
  • any vegetables you desire - anything goes
  • 2 tablespoons hemp seeds (optional)
Citrus Vinaigrette
  • ⅓ cup fresh orange juice (1 small to medium orange juiced)
  • 2 tablespoons Champagne vinegar
  • 1 tablespoon maple syrup
  • 3 tablespoons water
  • 1 tablespoon Dijon mustard
  • ¼ teaspoon dried thyme or ½ teaspoon chopped fresh thyme (or more if desired)
  • Salt & ground black pepper to taste

  1. In a large bowl toss the greens, tomatoes and vegetables. Top with fruit. Sprinkle with hemp seeds (if using).
Citrus Vinaigrette
  1. Combine all the ingredients in a food processor or blender. Process until smooth. Check for seasonings. Toss with salad adding a little vinaigrette at a time until lightly dressed. Serve the remaining dressing on the side. The vinaigrette can be kept in the refrigerator for 2-3 days.
