Sweet Potato and Brussels Sprouts For A Quick Nutrient Dense Dinner

Vegan Day 171 – Sweet Potato & Brussels sprouts

Last night I was watching a cooking show called “He Cooks, She Cooks” when suddenly, the female host says, “How great it would be to have this big party and have a lamb on a spit that was turning right in front of people”.

Then she proceeded to garnish a skinned lamb that actually looked like a human corpse. I kept rewinding it because I couldn't believe my eyes.

My husband walks in, and asks what I am doing? I just say, “I'm enraged”. I rewound the video and showed it to him. He quickly left the room knowing that when I get extremely passionate about something – look out.

The hostess, wrapped up the show with this unbelievable sentence, “My favorite moment of the party was when people started picking the flesh right off the bone”.

Who are these people who can't even wait to be served the lamb and run over to a lamb corpse and start picking it off? By the way, this was a Hollywood benefit dinner party.

So have I crossed the vegan line???? I honestly felt sick after watching that show. What happened? What changed? Even after, I became vegan, I have always respected the choices people want to make about food, but this seemed barbaric.

Also, how can I point fingers at anyone when I, at one time, always ordered a side of lamb at Santarpios with my pizza. Am I a hypocrite? I think if we were forced to look at the entire animal when we ate it, no one would eat meat.

Well, the past is the past, and I am now making new choices.

I know killing animals for food or pleasure always upset me, but I chose to ignore it. It is undeniably a metaphor for all the things that are wrong in my life that I choose to ignore.

Everything has a silver lining and I am going to consider this experience a wake-up call, and a reminder to keep my eyes wide open. On to food.

Food this weekend had to be kept simple because I was watching my seventeen-month-old Godson who is blessed with endless energy.

Wanted to share this quick and nutritious recipe I prepared. I paired the sweet potato with brussels sprouts with a basic salad dressed with lemon.

Did you know that the sweet potato is the main staple of food for the longest living people in the world from Okinawa? Not only to they enjoy the world's highest life expectancy;  they also stay active well into their 80s and 90s, and have one of the lowest rates of dementia in the world.  So I recommend a sweet potato three times a week.

Brussel sprouts should also be a vegan staple in your diet. They are loaded with Vitamin K which allows your blood to clot normally, helps protect bones from fractures and postmenopausal bone loss.

They are also loaded with Vitamin C to protect against colds in the winter.

Sweet Potato with Brussels Sprouts

ORDINARY VEGAN SWEET POTATO WITH BRUSSELS SPROUTS AND SUN-DRIED TOMATOES

Ingredients
  • 1 large sweet potato (depending on size - cook 450 degrees - 45 minutes or until
  • 6-8 brussels sprouts halved, stems and any discolored leaves removed - wash well or soak in a bowl of water
  • 2 cloves garlic, chopped
  • 1 tsp fresh lemon juice
  • ½ tsp lemon peel
  • 4 sun-dried tomatoes in oil, chopped
  • 1 tbsp olive oil
  • salt & pepper to taste
Instructions
  1. Scrub the skin of the sweet potato and poke a steam hole with a fork. Depending on size, bake in a 400 F oven for approximately 40 minutes or until soft.
  2. Meanwhile, boil some water in a saucepan.
  3. Add halved sprouts and boil for 3-4 minutes. Keep piercing with fork for doneness - you don't want to overcook them.
  4. Remove from water.
  5. Add olive oil to saute pan.
  6. Add garlic saute 30 seconds and then add all remaining ingredients and toss and saute for 5 minutes.
  7. Cut cooked sweet potato and pile on the brussels sprouts

    I can so relate to you. There are so many non-vegan things that make me sad now, though they never bothered me when I just started going vegan. To be honest I’m not so happy about family BBQ and stuff anymore but I don’t want to be judgmental either 🙁
