Given the heightened risk of contracting the novel coronavirus, today’s podcast is dedicated to the single best thing you can do to avoid it.

Unquestionably, I am not an alarmist, but sometimes we need to prepare for a possible disruption in our lives like the novel coronavirus. 

Also, as of today, March 5, the chances of contracting the novel coronavirus is very low, so please don’t panic. But that doesn’t mean we can’t take precautions. 

First off, we are being inundated with new, unfamiliar words and phrases.

For example, SARS-CoV-2 is the official name of the novel coronavirus that is spreading. COVID-19 is the disease it causes. 

Most media outlets use the term coronavirus to describe SARS-CoV2. 

Coronaviruses CoV is a family of viruses that cause illness ranging from the common cold to more severe disease.

There are hundreds of coronaviruses, most of which circulate among animals including pigs, camels, bats and cats

As a result, the term novel coronavirus (nCoV), means this virus is a new strain that has not been previously identified in humans. 

It should be noted, that odds are you won’t contract novel coronavirus. Especially if you know how to protect your body from the infection.

Vitamin C Salad – Kale, Blood Orange and Walnut Recipe Here

5-Ingredient Vitamin C Salad
 
From the Ordinary Vegan cookbook “The Easy 5 Ingredient Vegan Cookbook” – available on Amazon

Ingredients
  • 3 to 4 oranges
  • 1 tablespoon pure maple syrup
  • 2 tablespoons white wine vinegar
  • 2 garlic cloves, chopped
  • ¼ cup chopped walnuts
  • 4 cups kale, ribs removed, cut into ribbons
Instructions
  1. Juice 2 to 3 oranges, until you have ⅓ cup juice. Peel and section the remaining oranges.
  2. Combine the ⅓ cup juice, maple syrup, vinegar, and garlic in a food processor. Process until smooth. Taste and add a little water if necessary. Season with salt and fresh ground black pepper.
  3. Heat the oven to 350 degrees F.
  4. Spread the walnuts in a single layer on a baking sheet lined in parchment paper. Roast for 5 to 10 minutes, toss the nuts occasionally to ensure even cooking. They are done when they appear a shade darker and smell toasty. Keep a close eye so they don’t burn.
  5. Place the kale in a large. bowl. Add a small amount of the dressing and massage the dressing into the kale for about 2 minutes to soften it, being careful not to overdress.
  6. Add the remaining orange segments and toasted walnuts, and drizzle with a little more dressing if needed.
  7. *Serving Suggestion – Add dried tart cherries or a leftover grain like farro to amp up the protein. For a thicker dressing, add a tablespoon of olive oil.
