Creamy Vegan Ranch Dressing

Ingredients

  • 3/4 cup non-dairy unsweetened almond milk
  • 1 tablespoon of lemon juice
  • 1/2 cup organic tofu, chopped
  • 1 tablespoon apple cider vinegar
  • 2 teaspoons Dijon Mustard
  • 1 garlic clove, minced
  • 2 tablespoons fresh basil, chopped
  • 1 tablespoon fresh dill, chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 teaspoon salt (or more to taste)
  • Fresh ground black pepper

Method
 

Steps
  1. In a bowl, combine the non-dairy milk and 1 tablespoon of lemon juice. Let it stand for 10 minutes.
  2. Add the non-dairy milk, tofu, vinegar, mustard and garlic to a food processor or blender and process until smooth.
  3. Add the herbs, salt and ground black pepper and process another 10 seconds.
  4. Taste and season with more salt or ground black pepper if needed.
  5. The dressing will last 3 to 4 days.
