Hummus & Hemp Seed Pita Pockets

Ingredients
  

hummus
  • 1 1/2 cups cooked chickpeas
  • 2 teaspoons garlic
  • 1/2 cup water
  • 4 tablespoons hemp seeds
  • 2 tablespoons lemon juice
  • salt and ground black pepper
cucumber and tomato salad
  • 1/2 cup cucumber, diced
  • 1/2 cup tomatoes, diced
  • 1/4 cup red pepper, diced
  • 1/4 cup parsley, chopped
  • 2 tablespoons green onion (or shallots)
  • 2 tablespoons lemon juice
  • 1 whole-wheat pita

Method
 

Steps
  1. Boil 1/2 cup of water and add cooked chickpeas, garlic and boil for one minute. Remove from heat and coarsely mash. Stir in the hemp seeds, lemon juice and season with salt & pepper.
  2. Combine the cucumber, tomato, pepper, parsley, green onion and lemon juice in a small bowl. Season with salt and pepper, if desired.
  3. Fill 1/2 whole-wheat pita with 1/3 cup hummus and 1/2 cup cucumber salad.
