Tabbouleh Salad

Traditional Salad recipe with bulgur, parsley, mint, tomatoes, and lemon dressing

Ingredients
  

  • 2/3 cup Cooked Bulgur (follow directions on package)
  • 4 firm tomatoes, chopped fine (or 20 cherry tomatoes, chopped)
  • 1 small cucumber, chopped
  • 1/3 cup mint, chopped fine
  • 2 1/2 cups parsley, chopped fine
  • 3 green onions, finely chopped (white & lower green)
  • 4 tbsp fresh lemon juice
  • 4 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp fresh ground black pepper
  • 1 garlic clove, minced

Method
 

  1. In a large bowl, whisk together the olive oil, lemon juice, minced garlic, salt & pepper
  2. Add the cooked bulgur, tomatoes, cucumber mint, parsley, and green onions. Toss to combine. Season to taste. Refrigerate until ready to serve.

Notes

Bulgur comes in different coarseness levels, typically categorized as fine, medium, and coarse. These variations affect how the bulgur is cooked. Fine or medium will work well in this recipe. For best results, read the package instructions for cooking the bulgur. Serves 6 as a side dish.
