I have been celebrating my birthday all week and more importantly, celebrating two years plant-strong.

I wanted to honor both of these landmarks with something decadent, and this vegan chocolate mousse hit the spot.

It is dairy and gluten free, and ridiculously simple to make.  It is also high in protein.  Oh yeah, and did I mention delicious? Yum!

Vegan Chocolate Mousse

Serves: 2
Ingredients
  • 1 avocado
  • 1 teaspoon vanilla
  • ¼ cup cocoa powder
  • ¼ cup maple syrup
  • 6 tablespoons non-dairy milk
Instructions
  1. Cut avocado in half and remove pit. Scoop out less and put in the blender or food processor along with the remaining ingredients.
  2. Process until smooth.
  3. Serve immediately or refrigerate until you are ready to serve.
