Top 9 Plant-Based Egg Substitutes
When I began my vegan journey and stopped using eggs, I ended up with a lot of loafs and veggie burgers that simply fell apart when I cooked them. Since then I've learned a lot about egg substitutes. Eggs help food bind because they have saturated fats which our body doesn't want or need. So the most challenging part of plant-based cooking is finding replacements to hold food together. There are many good commercial vegan egg replacers like Ener-G and The Vegg. My personal favorite egg substitute is 1 tablespoon of ground flax seed with 2 1/2 tablespoons of water whisked together and put in the refrigerator for 10 minutes to thicken. I use this method in any baking or roasting recipes that call for eggs. It is very versatile.
Having too much moisture in burgers and loafs can also create a problem. Vegetables that contain a lot of moisture include onions, zucchini, cauliflower, eggplant, spinach, radish, celery and broccoli. If you are using those vegetables in your burger or lentil loaf, try some chickpea powder, rolled oats or vegan breadcrumbs to help absorb some of that moisture so it stays compact.

I am a newbie, as of today,sept.14,2015, I just gotkathy frestons book,veganist, and I thought it is a great book to read, my story is,about,I had the gastric bypass done in 1995, lost over 300lb,have kept a steady weight, but my body is having problems with iron absorption,I have to go thru an iron transfusion every four mo. My Dr, is worried about my health, because I now have a multitude, of problems with my health,type2/diabetes,ashma,gout,fibermyalgia,and I have got to get what is wrong with my system straightened out, do you guys think this us too drastic of a step to take??? What do you think!!!
Hi Nancy – first and foremost, congratulations on taking care of your health and your weight loss! I am so sorry to hear that you continue to experience health problems. Have you had any allergy tests done? We recently went through something a little similar with a family member and it turned out that he had many allergies. I don’t always make comments but I just would like to say that egg is an biding agent because of the proteins not fat. As chickpeas and soy have a high quantity of protein they can also be used as substitutes, similar achievement can be done with starches such as in corns flour, arrowroot flour, tapioca flour, potato flour etc. I make vegan mayo using chickpeas and is quite the same as regular mayo =)
